Harriet Tubman School
November 16th 2002 was an eventful day at the Harriet Tubman Charter School. This innovative and truly caring school has decided to take a leap forward and make a difference in children's lives by creating a program to feed them healthy food.

Over 90 members of the school family are taking part in a program to create tasty, innovative and healthy foods along with the addition of the Omega-3 fatty acids to bring about healthy habits to normalize unhealthy blood values.

Parents and children alike came to the school to test the food creations. Without telling then, we cooked the food with the micro-encapsulated Omega-3 powder in each recipe and each exclaimed. "I can do that!"

The uniqueness of this program is that the teachers, mothers and fathers are exeptionally supportive in the effort to help the children..

is well known that teachers are a great influence in a child's life and when teachers are willing to participate in a life-style changing program you know they are dedicated to the children they are teaching. The enthusiam in which all are willing to learn is exciting as we start the program. The exciting thing all found out is that you don't need to change what you eat, you need to learn how to balance what you eat. Some ot the recipes included, yogurt and fruit, cottage cheese and fruit, pancakes, high powererd peanut butter and apples, spaghetti and meatballs, cheese and turkey potato skins, potato pancakes, chili, and nutty chicken fingers.

We can do this!

Whenever anyone talks about life style changes, everyone seems to panic. However, it is our experience that if you work with the foods one likes and just make simple changes to help keep the body balanced, it is a win - win situation for all.

Little ones want to succeed!

The one who prepares meals for the family, whether in the home or in a restaurant becomes the pharmacist of the family. We can eat ourselves to good health or we can eat ourselves to disease. It is up to us to decide which it will be.
Chicken Delight!
Something as simple a slivered chicken can became a delicious meal or snack if prepared with tasty spices. Using sauces helps children try foods they usually will not touch. For example, cut chicken into small pieces, roll in one egg white, then roll in a bowl of ground up nuts and fry. Chicken fingers take on a new flavor and are much healthier than those bought in the stores. A healthy snack in a very short period of time.

Being healthy also means taking responsibility in your life. The fourth grade class has decided to make a project of their own. They are going to make delicious shakes for themselves and for the community. In this project they will learn to cook, to start a business and to get involved in the community.

This food is great! The recipes are easy!

It is so exciting to watch children when they have a chance to take charge and become responsible. They begin to do very interesting and fun things that excites their imagination. Adults too can learn from the creativity of a child

Great food, lots of fun!

In our hectic schedules we sometimes think that we don't have time to cook healthy meals. However most people think healthy is a five course gourmet meal. These parents are finding out that making exciting meals can be fun, easy and done in a very short period of time.

It is also very nice to see fathers take time to help out. We have creative chefs in the HTCS family community so this project will be very innovative. Its not easy for parents to take time to change their life style but the rewards are great as those who participate in the project will have great results. The real test is not the few months of the project but if the families will continue to commit to a healthy life stye for the entire family to be successful, happy and healthy.
